Organic Celery, Carrot and Leek Soup.
All organic ingredients:
2 carrots
1 leek
8 celery sticks
1 onion
1 cube for veg stock
a good slug of vegetable oil
1. roughly chop the onion, then sautee the onion in the oil on a very low heat;
2. while the onion is frying, roughly chop the celery, carrots and leek;
3. when the onion is soft, add the veg, ramp up the heat, and fry the veg until softened;
4. while the veg is frying make the veg stock by dissolving the stock cube in freshly boiled water;
5. when the veg is softened add the stock, add a sprinkle of salt, bring to the boil, then simmer for 25 minutes.
Mash the soup and give it all a good stir.
To serve, add salt and pepper, and the zest of half a lemon. Coriander also enhances the taste.
